OMG...Tried this recipe yesterday for my son and I. OMG was it the best! Put it on a bagel (which I don't usually have, oh well, this was a splurge), with carmelized onions, red bell pepper and some morningstar "hamburg" crumbles along with a little Daiya cheddar inside of the folded omellette. Unbelieveable! Been vegan for less than a year and can't believe the great food I've been enjoying (and I was a pretty significant meat eater all my life (now 57). This morning I threw leftovers in microwave, toasted another bagel (my bad) and had another fantastic breakfast!lindas5589https://www.blogger.com/profile/01946508541913354481noreply@blogger.comtag:blogger.com,1999:blog-25944903.post-43426379473944914362013-01-04T05:16:04.236-08:002013-01-04T05:16:04.236-08:00Yum yum yum yum yum! Making them this way took some of the pressure of them having to be big and perfect for filling, but I know it would work and I look forward to going all the way next time. Thanks for a great recipe and for all the suggestions.LesliePVDhttps://www.blogger.com/profile/10232520685637578057noreply@blogger.comtag:blogger.com,1999:blog-25944903.post-21178264670642695532013-01-04T05:14:07.817-08:002013-01-04T05:14:07.817-08:00I used this recipe to make some "eggs" f...I used this recipe to make some "eggs" for a breakfast wrap. Yum, yum, yum, yum, yum. Black eyed peas, salsa, avocado and this fluffy, lovely, warm golden goodness. Also took the pressure off of it to make something big enough to hold the filling of an omelet. But I could tell how it would be totally possible! Thanks for the great recipe!LesliePVDhttps://www.blogger.com/profile/10232520685637578057noreply@blogger.comtag:blogger.com,1999:blog-25944903.post-62273265595893986372012-06-28T15:59:53.276-07:002012-06-28T15:59:53.276-07:00You had me at 8-foot-woodyYou had me at 8-foot-woodyAnonymousnoreply@blogger.comtag:blogger.com,1999:blog-25944903.post-47173284165894576792012-02-21T11:06:09.424-08:002012-02-21T11:06:09.424-08:00I just made this and it's awesome! I didn't have chickpea flour, either, so I substituted falafel mix. (Actually a tablespoon of falafel mix is the secret to a fluffy non-vegan omelette.) It still turned out great!Anna S.noreply@blogger.comtag:blogger.com,1999:blog-25944903.post-25629580532069927392012-01-21T18:32:03.649-08:002012-01-21T18:32:03.649-08:00ET: Not sure. Is hard to say, but I'd give it another try. Once you get the knack, you'll see how tasty it is!Lindy Loohttps://www.blogger.com/profile/08157095992986439072noreply@blogger.comtag:blogger.com,1999:blog-25944903.post-10292241630339103452012-01-19T08:39:46.750-08:002012-01-19T08:39:46.750-08:00Hi! Ideas on what happened? Oh I used white flour.Edward Tennysonhttps://www.blogger.com/profile/13542239832425412904noreply@blogger.comtag:blogger.com,1999:blog-25944903.post-14121835927768437452010-12-08T03:00:31.235-08:002010-12-08T03:00:31.235-08:00I tried another vegan omelette recipe I found onli...I tried another vegan omelette recipe I found online and came up with the same congealed mess that you did. Then I tried yours -- though I couldn't find chickpea flour, so I used wholemeal flour instead -- and it came out great. Thanks so much for posting it! I've never had a real omelette before (I'm vegetarian but have always hated the taste of eggs), but always envied what a flexible and filling meal they made, and now I can make my own. Thanks!Veganhttps://www.blogger.com/profile/06867928749393717523noreply@blogger.com
